Aloo Paneer Koftas

Aloo paneer kofta is a quick party snack.

 Paneer  1 cup 
 Large potatoes    2
 Carrots    2 
 Ginger garlic paste  1 tsp  
 Green chillies  2
 Coriander leaves few
 Curry leaves    few ¼ tsp
 Chilli powder    ¾ tsp 
 Hing   generous pinch
 Corn four or bread crumbs     for dusting
 Oil   for deep frying
 Salt to taste

Method :-

1). Pressure Cook the Potatoes and Carrots up to 4 or 5 whistles. Peel the skin of the potatoes. Mash the boiled potato and carrot together until there are no lumps. Keep aside.

2). Grate the Paneer very finely. Chop the coriander leaves. Slice green chillies into thin discs. Keep aside.

3). In a Large Bowl, Add the mashed Potatoes, Grated Paneer, finely chopped Green Chilli's and chopped coriander leaves & mix well. Add the rest of the ingredients to this mixture (except corn flour and oil). Combine everything together. The moisture from the potato and carrot should be enough to bring it together. Knead them all together. Shape them into small lime - sized balls.

4). Heat a pan and add enough oil to submerge the koftas half way. You can deep fry the koftas but it's really not necessary. Dust with corn flour and gently place the koftas in the hot oil.
5). Turn gently when golden brown on one side. Keep the fire medium low to ensure the inside is cooked too. Drain on to paper towels and serve hot with ketchup or mint chutney.

  2. Tried this last weekend sweetie..I did miss to add cashew..n since I dint have paneer, used cheese layer/cheese spread..Still was so YUMM... I tired both ways, deep fry and just roasting with small amount of oil (as the second method)..Both were delicious..
