Mushroom Peas Masala | காளான் பட்டாணி மசாலா

Mushroom and Peas cooked in spicy onion tomato gravy enriched by cashew paste. Mushroom Peas masala goes best with any variety of Indian Roti or Pulao. The crisp onions and tangy tomatoes are well balanced with chewy mushrooms and exotic spices.

Ingredients :-
 Mushroom  2 cups
 Peas   1 cup
 Ginger garlic paste     1 tbsp  
To Grind :- 
 Onion (sliced lengthwise)   1
 Green chillies (chopped) 2
 Tomatoes (chopped) 2
 Cashews  10
 Turmeric powder     ½ tsp
 Chilli powder  1 tsp
 Garam masala powder  ½ tsp
 Bay leaf  1 
 Cloves  3
 Cinnamon  1 " stick
Method :-
1). Trim the stem of the button mushrooms. Leave them whole if small or cut them into 1/2 or 1/4Click the link to  know :- How to clean the Mushroom.
2). Heat oil in a pan, add the Bay leaf, Cloves and Cinnamon, saute them till fragrant. Add the sliced onions and saute until they turn translucent. Then add green Chillies and saute for a minute.

3). Add the tomatoes to the above mixture. Immediately add, Turmeric powder, Chilli powder and Garam masala powders and mix. Add cashews to the mixture and saute them well, until the tomatoes are soft and mushy.

4). Switch off and let it cool. Allow it to cool and grind this into a smooth paste adding little water. Keep aside.

5). Heat oil in a pan, add ginger garlic paste and saute till the raw smell extracts from it. Add peas and fry them until they get cooked in a medium flame.

6). Now add the ground paste with sufficient water and allow it to boil. Add the chopped mushrooms ,along with salt,cover and  cook  for 10 minutes in low flame.

 5). Mushrooms let out water while cooking so adjust and add sufficient water and Salt. Allow it to boil.   The gravy tends to be thick after sometime, so adjust the quantity of gravy accordingly.Check for salt and spices.
Done ! Mushroom and peas cooked in rich spicy sauce.  Tasted great with Paratha.
Notes :-
# When buying mushrooms, pick white firm ones. These taste lot better than the soft mushrooms.
# If you want to skip the masala making process, you can grind the all the ingredients listed under masala paste with out roasting them.  But I like the taste of the masala that is roasted and then ground to paste. 
# You can also add fresh cream to give more taste to this gravy.
