Simple Potato Stir Fry | உருளைக்கிழங்கு பொரியல் | Urulaikilangu Poriyal

Potato stir fry | Urulaikilangu Poriyal is very simple and comforting. Potatoes are kids fav veggie and it is easy to handle. Potato is available throughout the year and has long shelf life. 
 
Ingredients :-

 Potato (finely chopped)    2 
 Onion (finely chopped)  1 
 Grated coconut    1 tbsp 
 Turmeric powder    ¼ tsp
 Chilli powder    1 tsp  
 Curry leaves   few
 Mustard    ¼ tsp
 Channa dal ½ tsp
 Urad dal    ½ tsp
 Oil   1 tsp
 Salt  to taste

Method:-
--------------
1). Heat Oil in a pan, season with mustard, urad dal and channa dal. Add onions, curry leaves and salt, saute till they turn translucent. 
2). Add turmeric powder, chilli powder and mix. Then add the chopped potatoes along with a cup of water and mix well. 
3). Cook over medium heat till potatoes are tender. Keep stirring in-between as it helps to prevent the potato pieces from sticking to the bottom and getting burnt. Finally add the grated coconut and combine together. Switch off !
This spicy stirfry goes with rice varieties. enjoy !

Notes :-

# Adjust the spices to suit your taste. 
# Cook on low flame for even cooking. Do not cook on high flame as the potatoes might be mashed.
# Make sure to stir often as it helps to avoid burning at the bottom. 
# You can also use sambar powder instead of chilli powder for different flavor.
