Besan Curry | கடலைமாவு குழம்பு

Instant Sambar/Curry is a very simple and delicious accompaniment that can be prepared with handy ingredients. It is perfect for south Indian delicacies (tiffin and Indian-bread varieties). I read this recipe in a magazine, when I was in India. I am not able to recollect its name, but I very well remember the recipe and its taste.

Ingredients :-
 Onion (finely chopped)    1
 Tomatoes (finely chopped)   2
 Green chillies   3  
 Besan | கடலை மாவு 2 tbsp   
 Ginger (minced)     1 "
 Turmeric powder  ½ tsp  
 Mustar  ½ tsp
 Urad dal   ½ tsp
 Channa dal  ½ tsp  
 Curry leaves  few
 Oil  1 tbsp
 Salt  to taste
Method :-
1). Heat oil in the pan, add mustard, Urad dal and channa dal, saute till it turns brown. Add onions, curry leaves, g.chillies and garlic, saute till onions turns transparent.
2). Then add tomatoes and salt, saute till it becomes mushy. 
3). Dilute besan in 1cup of water and turmeric powder, whisk without any lumps. Add this to the above cooked masala and combine well.
4). Reduce flame and let it cook in sim for 5minutes, the mixture will start thickening. Cook till the mixture blends well(shines and thickens) and raw smell goes. Remove and garnish with chopped coriander leaves. 
Notes :-
# Alternatively, You can use lime-juice instead of tomatoes. Follow the same procedure except adding tomatoes and at last garnish with lime juice. 
# Make sure you dilute besan in water without any lumps. 
# Keep stirring to prevent lump formation till the raw smell leaves and let it cook in sim.
# It should be in semi-consistency not too thick or thin. 
# It thickens more after it cools, if necessary add little warm water along with salt  and combine.
