Carrot Rice | கேரட் சாதம் | Carrot Sadham

Carrot Rice is delicious, colorful and healthy lunch-box recipe that can be prepared in a jiffy. Simple Raita makes it a satisfying meal. When you are bored of preparing an elaborate meal, this is a quick option rather than preparing usual variety rice. 

Carrots has lots of health benefits like, improved vision, cancer prevention, anti-aging, healthy glowing skin, a powerful antiseptic, prevents heart disease, cleanse the body, healthy teeth & gums and prevent stroke.

Ingredients :-

 Cooked Rice     1 cup 
 Carrot (finely chopped)   ¾ cup
 Onion (finely chopped)   1
 Curry leaves  few
 Cooking Oil  1 tbsp
 Mustard   ½ tsp
 Channa dal  1 tsp
 Urad dal  1 tsp
 Asafoetida  pinch
 Gingelly Oil / Ghee 1tsp (optional)   
 Salt  to taste   
To Grind Coarsely :- 
 Red Chillies  4 - 5    
 Peanuts  1 tbsp

Method :-

1). Spread the rice with fork and mix a tsp of gingelly oil/ghee for nice flavor. Toss it well and keep it aside. 

2). Heat Oil in a pan, add mustard. When it splutters add urad dal & channa dal and fry till golden brown. Then add onions, salt and saute till transparent. 
3). Add carrots and cook till raw smell leaves and it becomes soft. Then add the grounded powder and mix well. Finally add the cooked rice and stir gently to combine together without breaking the rice. 
Garnish with cilantro and serve with raita
Notes :-

# You can also make it flavorful by adding bayleaf, clove & cinnamon along with garam masala powder / sambar powder.
# Include other vegetables like peas, capsicum. You can even include cooked legumes/ sprouts.
# Follow the same recipe with leftover rice too.
# You can use any variety of rice for this. But do not over cook the rice. 
# Also add ghee-fried cashews to the rice.
