Coconut Rice | தேங்காய் சாதம் | Thengai Sadham

Coconut Rice needs no introduction, an authentic South-Indian variety-rice. This is very simple, delicious and can be prepared in a jiffy. It's a perfect lunch-box recipe. Whenever I prepare this rice, I go nostalgic esp my Coconut farm. I love tender coconut water (இளநீர்). My dad has planted special variety of tender coconut trees for me. They are the sweetest & tastiest, I have ever tasted !

Ingredients :-
 Cooked Rice     1 cup 
 Coconut (grated)   ¾ cup
 Onion (finely chopped)   1
 Curry leaves  few
 Cooking Oil  1 tbsp
 Mustard   ½ tsp
 Channa dal  1 tsp
 Urad dal  1 tsp
 Asafoetida  pinch
 Green Chillies  4 - 5  
 Salt  to taste   

Method :-
1). Cook the rice in a such a way that each grain is separate. Spread the cooked rice on a wide plate and allow to cool. Keep it aside. 

2). Heat Oil in a pan, add mustard. When it splutters, add urad dal & channa dal and fry till golden brown. Then add onions, chillies, salt and saute till transparent. Finally add grated coconut and saute for about 2-3 minutes.
3). Add the rice and gently combine together without breaking the rice. Check for salt and adjust accordingly. 

Serve with pickle and appalam or any gravy.
Notes :-
# Add cashews/peanuts for a crunchy and rich taste.   
# You can reduce the coconut level to ½cup (i.e. 1 cup rice : ½cup coconut). But, coconut being the star ingredient, adds more flavor to the recipe.
