Thayir Sevai | தயிர் சேவை | Curd Sevai

Thayir Sevai is a famous South-Indian tiffin recipe. Rice noodles flavored with curd and seasoned with spices. I used instant sevai, to follow the traditional(home made) sevai method check here.  

This Thayir sevai is totally soothing, I served it along with Vegetable Sevai which is the spicier version. Check other sevai versions which I have already posted -> Veg Sevai & Tomato Sevai. 

Ingredients :-

 Instant Sevai / Idiyappam   10o grams 
 Curd / Yogurt   1 cup
 Milk   ½ cup 
 Green Chillies(finely chopped)    2
 Ginger (grated)  ½" piece 
 Asafoetida   pinch
 Curry leaves   1 sprig 
 Mustard   ¼ tsp
 Urad dal   ½ tsp
 Channa dal    ½ tsp
 Oil   1 tsp
 Salt  to taste

Method :-
-------------
 

1). Heat water in a deep pan and switch off when it boils. Then add the sevai and keep it covered for 3-5 minutes till rice sevai is tender. Drain the water and set it aside. (or) Prepare rice sevai as per the instructions on the pack.    
2). Heat oil in a pan and add mustard seeds. When they splutter, add urad dal, channa dal, asafoetida, grated ginger, chopped green chillies and curry leaves. Saute till the dal turns brown. Keep it aside. 
3). Mix the cooked sevai and the curd along with salt. Little by little add milk and combine everything together. Finally add the seasoning and mix together.

Garnish with chopped coriander leaves and serve hot with pickle !

Notes :-
-----------
# You can also garnish with grated Carrots, Pomegranates, Grapes and nuts.
# Use full cream milk, it gives a creamy texture. If you are not using milk, Sevai becomes very thick.
