Lemon Sevai | லெமன் சேவை

Lemon Sevai is a simple and delicious South-Indian recipe, which is perfect for breakfast/dinner and even you can pack it for lunchbox/travel. Check out my other sevai versions here - Tomato Sevai, Veg Sevai, Curd Sevai and Traditional Sevai.

 I have very good memories of lemon sevai. My granny/chithi prepares this lemon sevai atleast once a month during my childhood days at my grandparents place. It was one of my favorite during those days. Pure nostalgia..


Ingredients :-

------------------- 
 Instant Sevai    1 cup 
 Lemon Juice   2 tbsp 
 Green chillies   3
 Curry leaves   few 
 Hing   pinch 
 Curry leaves few
 Peanuts   1 tbsp 
 Turmeric powder   1 tsp  
 Oil 2 tsp  
 Urad dal  ½  tsp 
 Mustard    ¼ tsp
 Channa dal    ½ tsp     
 Salt to taste

Method :-
-------------

1). 
Heat water in a deep pan and switch off when it boils. Then add the sevai and keep it covered for 3-5 minutes till rice sevai is tender. Drain the water and set it aside. (or)
Cook instant sevai as per the package instructions. Check this link to know how to prepare traditional sevai .

2). Heat oil in a pan, add mustard and let it splutter. Then add urad dal, channa dal, peanuts(if you are using) and fry till it turns golden brown. Add the chopped onions, red chillies, curry leaves, peanuts and saute till onions turns translucent. Then add turmeric powder, hing and saute for a minute and mix well. 

3). On low flame add the drained sevai, salt and lemon juice. combine everything together and garnish with coriander leaves.
Serve with coconut chutney, a perfect combo.

# You can use peanuts/cashews for a crunchy taste.
