Corn Meal Idli | Instant Idli

Corn Meal Idli is quick, nutritious and filling breakfast recipe. Cornmeal and coriander leaves combination gives natural color to the idlies and make it very appetizing. This is an instant version which does not need any grinding. If you have cornmeal handy, you can prepare this tasty idli in no time.

Corn is dried and coarsely grounded to form Cornmeal, which is yellow in color. This is available ready-made in all grocery shops. Its gluten free and lowers cholesterol levels too. Ingredients :-

 Corn meal      2 cups  
 Curd    2 cups
 Eno | Cooking soda   ¾ tsp
 Oil    1 tbsp 
 Mustard    ¼ tsp
 Channa dal  1 tsp 
 Urad dal    1 tsp
 Coriander leaves (finely chopped)    few  
 Green chillies  3
 Ginger (minced) small piece  
 Salt  to taste

 

Method:-

1).  Heat oil in a pan, add mustard, urad dhal, channa dal and saute till dals become godlen brown. Then add minced ginger, curry leaves and saute till aromatic. In a medium flame, add corn meal to this seasoning and constantly roast for 2 minutes. Saute till you get a nice aroma from corn meal. Let it cool. 
2). In a mixing bowl, add the sauteed corn meal, beaten curd, salt and mix together. Then add chopped coriander leaves and combine. The batter should be in the consistency of Idli batter. If the batter is too thick adjust the consistency by adding ½ cup water. Let it rest for 10 minutes. 
3). Prepare the idli cooker by boiling water. Grease the idli plate with ghee/oil and place chopped coriander leaves. Pour the batter over the coriander leaves (fill only ¾th of the mould). and steam it for 12 - 15 minutes. Remove the plates from the cooker and let it cool a little. Using a spoon, scoop out the idli's
Spongy corn meal idlies are ready, serve hot with chutney !  


Notes :-
-----------
# Don't miss coriander leaves, it adds extra flavor to idlies. 
# To make idli colorful, you can use grated carrot or mixed veggies in the idli plate instead of chopped coriander leaves. 
# Add eno/cooking soda in the last minute only. Do not let the batter stay for long after adding it. 
# No fermentation is needed for this recipe.
# You can also prepare dosas with leftover batter. 
# Add groundnuts / cashews and add a crunchy taste
