Spicy Cornflakes Mixture | சோள சீவல் மிச்சர் | Cornflakes Chivda

Spicy Cornflakes Mixture | Cornflakes Chivda, a very famous Maharashtrian snack is delicious and crunchy. This is an easy and tasty snack which is an alternate to south-Indian mixture which can be enjoyed at any time. It is first deep fried and then flavored with spices. 

Ingredients :- 
 Sweetened Cornflakes    3 cups
 Red chilli powder  1 tsp
 Oil    for deep frying  
 Curry leaves  few  
 Peanuts, cashews, raisins    ¼  cup each 
 Hing  pinch
 Salt  to taste

Method :-
1). Heat oil in a pan, deep fry cornflakes till crisp at a medium flame. Do it in batches and drain on absorbent paper to absorb the excess oil.
2). Fry peanuts, raisins and cashew nuts separately, drain the excess oil. Keep it aside.
4). Mix all the fried items together along with salt, hing and chilli powder. Gently fold in the cornflakes until they are well coated with the spice blend.

Cool completely and store in airtight container at room temperature. It will stay fresh for at least a week. 
Notes :-
#  You can use any kind of nuts of your choice to enrich the taste.  
# If you are using unsweetened cornflakes, add a tsp of sugar along with salt.  
# Make sure you fry the items in medium flame else it will turn brown. 
# If the oil temperature is right, they won't drink up any oil and will stay nice & crunchy for a week or more.  
# Make sure you don't break the flakes while mixing.
