Beetroot Stirfry | பீட்ருட் பொரியல் | Beetroot Poriyal

Beetroot Poriyal is an authentic rice-accompaniment. It’s very easy to make and healthy too. This veggie is loaded with anti-oxidants and nutrients. Its my fav since my childhood. 

Ingredients :-
 Beetroot   2
 Onion (finely chopped)   ½  
 Grated Coconut  2 tbsp
 Turmeric powder ¼ tsp
 Chilli powder  1 tsp
 Curry leaves few
 Oil 1tsp
 Mustard   ¼ tsp 
 Channa dal ½ tsp
 Urad dal  ½ tsp
 Salt to taste 

Method :-
1). Wash the beets, peel off skin and chop/grate it finely. 
2). Heat oil in a pan, splutter mustard, add urad dal and channa dal saute till turns light brown. Then add onions and fry till it turns translucent.

3). Then add turmeric powder, chilli powder, salt and mix well. Then add chopped beetroot and mix well.
4). Add a cup of water until the beets gets well immersed in water. Keep the flame in medium and cook for 10-12 minutes till it is fully cooked. Keep stirring often to avoid burning. 
5). Once the beets are fully cooked, add the grated coconut and switch off. Combine everything together and serve.
Serve with steamed rice and gravy(Sambar) or Rasam.

Notes :-     
# Pressure cook Beets in a separate cup when you cook rice, it saves time.         
# Add sambar powder along with chilli powder for a different flavour.
