Cucumber Raita | வெள்ளரி பச்சடி | Vellari Pachadi

Cucumber Raita is very refreshing and simple recipe. It suits best with the spicy food. The coolness of the yoghurt and the cucumber will counteract the hotness of the spicy food. This is a great accompaniment for Paratha varieties and Biriyani varieties.
Ingredients :-
 Thick Yogurt   1 cup 
 Cucumber (small)   3 
 Cumin powder   ¼ tsp
 Red Chilli / Pepper Powder   ¼ tsp
 Chat Masala  ¼ tsp
 Mint Leaves (for garnishing)  lemon size
 Salt to taste

Method :-

1). Wash, peel and grate the Cucumber.
Add salt and keep it aside for 10-15 minutes. Then squeeze out the excess water and keep it aside.

2).Whisk the yogurt till smooth. Add the grated cucumber along with salt, cumin powder and red chilli powder, combine well. Sprinkle chat masala and garnish with mint leaves. Serve chill !

Notes :- 

# I usually grate the cucumber, so that the cucumber flavor combines well with the yogurt. But, you can very well chop it if you like the crunchy taste or you can grate half and chop the rest and use it for garnishing.
# Greek yogurt suits best as it is thick and creamy, unlike regular yogurt. Also it has more protein. 
# Make sure the yogurt is not sour.
