Ash gourd (White Pumpkin) Gravy | வெள்ளை பூசணிக்காய் குழம்பு | Vellai Pusanikai Kulambu | Thayir Kulambu

Ash Gourd Kulambu is a simple, tasty and wonderful accompaniment. It goes well with everything - steamed rice, variety rice, Pulao varieties, Paratha varieties, Bread varieties and also tiffin varieties!

Ash gourd or White pumpkin or Vellai Pusanikai or Boodidha Gummidikai is loaded with Vitamins(b1,b3 & C) and minerals. It contains almost 96% water, and is a dietitian's delight. Also high pottasium content helps to maintain a healthy blood pressure. It is a must in weght-loss diet.

This is also called as Thayir Kuzhambu. This is my mom's recipe and one of my fav. She suggested me this quick recipe in one of my lazy day. It is very easy to prepare and tastes delicious. 

Ingredients :-
 Ash gourd / White Pumpkin   1 cup 
 Big Onion (finely chopped) 1 
 Green Chillies (finely chopped)   5 
 Thick Curd   ¾ cup 
 Mustard   ½ tsp 
 Urad dal   1 tsp 
 Hing   pinch
 Curry leaves  few
 Coriander leaves(for garnishing)   few
 Grated Carrot (for garnishing) 1 tbsp
 Oil 1 tsp
 Salt to taste

Method :-

1). Scrap off the outer skin, remove the seeds and chop the Ash gourd in to small pieces. 

2). Boil it in a cup of water until it becomes soft and transparent or Microwave high for 5 minutes stirring in between. 
3). Heat oil in a pan, add mustard and let it splutter. Then add hing, urad dal and saute till it turns translucent. Add chopped onions, curry leaves, green chillies, salt and saute till it turns translucent. Now add the boiled ash guard(without water) and combine well. Switch off and cool it.
4). Whisk the yogurt until smooth. Add the ash guard mixture after it cooled down and garnish with grated carrot and chopped coriander leaves. 
Serve with steamed rice and spicy poriyal !
 Notes :-
# Ash-gourd has a bland taste and it absorbs the flavors of the spices used. It goes well with raitas, soups and sweets.
# Ash gourd is available pre-cut into large pieces and wrapped in plastic. Select those with firm flesh and store it in the refrigerator. It keeps fresh for 3 - 4 days.
# You can also grate the Ash gourd instead of chopping.
