I have very good memories of lemon sevai. My granny/chithi prepares this lemon sevai atleast once a month during my childhood days at my grandparents place. It was one of my favorite during those days. Pure nostalgia..
|Instant Sevai||1 cup|
|Lemon Juice||2 tbsp|
|Turmeric powder||1 tsp|
|Urad dal||½ tsp|
|Channa dal||½ tsp|
1). Heat water in a deep pan and switch off when it boils. Then add the sevai and keep it covered for 3-5 minutes till rice sevai is tender. Drain the water and set it aside. (or) Cook instant sevai as per the package instructions. Check this link to know how to prepare traditional sevai .
2). Heat oil in a pan, add mustard and let it splutter. Then add urad dal, channa dal, peanuts(if you are using) and fry till it turns golden brown. Add the chopped onions, red chillies, curry leaves, peanuts and saute till onions turns translucent. Then add turmeric powder, hing and saute for a minute and mix well.
Serve with coconut chutney, a perfect combo.
# You can use peanuts/cashews for a crunchy taste.
